The Imposter

 


I really wanted to make Italian's for today's post but I was out of hoagie rolls and no matter how hard I try I am not able to duplicate a homemade Italian quite like Amato's.

So I decided to go with something else we will call the Imposter!  I gotta tell ya, they came out so good I will definitely be making them again.

4 slices Texas Toast Bread (thick slices)
4 slices cooked bacon
4 oz. cooked chicken breast, divided
2 slices cheese (whatever you like)
1 tomato, sliced
1 dill pickle, sliced
½ onion, sliced
½ green or red baby bell pepper, sliced
8 Greek olives
8 slices candied jalapeƱo
Lettuce
Mayonnaise

Toast the bread until just golden.
Spread with mayonnaise.
Layer on slice of bread with ingredients starting with cheese, then meat, then sliced veggies and top with lettuce.  Place top of bread and secure with funky umbrella toothpick.  Serve with chips and pickles.  YUM!

Macaroni BLT Salad



Macaroni BLT Salad

1 box small macaroni shells
1 lb. cooked bacon, chopped
2 tomatoes, chopped
1 onion, diced
1½ cup ranch dressing
2 cups chopped Romaine lettuce
½ cup fresh chopped parsley
1½ tsp. fresh ground black pepper


Cook pasta according to directions. Drain, rinse and set aside.  Combine tomatoes, onion, pepper, and salad dressing together in a large bowl.  Toss in pasta and then add lettuce, parsley and bacon.

Egg Salad Clubhouse Sandwich

The classic club or clubhouse sandwich is typically turkey, bacon, lettuce, tomato and mayonnaise on toasted bread cut into quarters.  It is typically served with cole slaw and a sour pickle.  Everyone has their own version of the club and this one is mine.  I did borrow the picture from on-line because my club was just so tasty that we ate it all before I realized I didn't take a picture. 


3 hard boiled eggs, chopped
4 green olives, diced
1 tbsp. sour pickle relish
1 tsp onion powder
1 tsp paprika
2-3 tbsp. Dukes mayonnaise (just enough to combine egg mixture)

6 slices bacon, cooked
6 slices whole wheat bread lightly buttered and grilled on both sides
sliced tomato and lettuce
Dukes mayonnaise
Salt and pepper to taste

Divide egg salad mixture between two slices of toasted (or grilled) bread, top with another slice of the toasted or grilled bread.  Lather with Duke's mayonnaise, layer with lettuce, tomato, salt and pepper if desired, then bacon and a final slice of toasted bread.  Cut in quarters and serve with your favorite sides.
