Fig Coffee Cake - Feeding the Flock 23

 


 

¾ cup sourdough

2 eggs

1-1/3 cup buttermilk

2½ cups all-purpose flour

½ cup brown sugar

½ cup white sugar

½ cup slivered toasted almonds

¼ cup candied ginger

½ cup fig preserves

1 tsp. vanilla

2 tsp. baking powder

½ tsp, baking soda

½ tsp. cinnamon

½ tsp. nutmeg

 

Preheat oven to 350º

 

In large bowl, combine flour, sugars, baking powder, baking soda, cinnamon, and nutmeg.  Make a well in the center and set aside.

 

Mix together candied ginger, toasted almonds and fig preserves in a small bowl.

 

In another bowl combine sourdough starter, buttermilk, eggs, and vanilla. Add mixture to well in flour mixture all at once.  Stir just until moistened. Batter will be lumpy.

Spoon half of the mixture into a greased Bundt pan.  Spoon mounds of fig mixture over the batter, then cover with remaining batter.  Bake in preheated oven for 40-45 minutes, until golden brown.  Let cool for about 10 minutes and then remove from Bundt pan and let cool completely.  Sprinkle with powdered sugar.

Apple Coffee Cake


Apple Coffee Cake
 

1 cup all-purpose flour

1 cup whole wheat flour

2 cups brown sugar

¾ cup shortening

1 tsp baking soda

1 egg

2 tsp vanilla extract

1 tsp maple extract

1 cup hot coffee

2 apples, peeled, cored and thinly sliced

1 tbsp lemon juice

 

Preheat oven to 350º

 

Toss apples with lemon juice and set aside.

 

Combine the brown sugar and flours together.  Cut in shortening until mixed well, (it will be lumpy).  Take out one cup of mixture and set aside.

 

Dissolve baking soda in hot coffee and add to remaining flour/sugar mixture.  Add the egg, vanilla and maple extract and mix quickly.  Do not over mix.

 

Pour batter into a rectangle glass baking dish.  Layer sliced apples over top.  Sprinkle with crumb topping.  Bake at 350º for 45 minutes.  Can sprinkle with powdered sugar and served warm or cold.

Cranberry Apple Coffee Cake

Cranberry Apple Coffee Cake

CAKE
3 cups flour
3 cups apples, peeled chopped
1 cup fresh cranberries
1 tsp baking powder
1 tsp salt
1 cup vegetable oil
2 large eggs, beaten
2 cups sugar

TOPPING
½ cup butter, melted
¼ cup sugar
1 tbsp dark corn syrup
1½ tsp vanilla

Preheat oven 350°

Grease and flour Bundt pan.

Combine flour, salt, sugar and baking powder in large bowl.  Combine eggs and oil together and add to dry ingredients.  Blend well.  Batter will be stiff.  Fold in apples and cranberries gently.  Spoon into Bundt pan and bake 1 hour and 15 minutes.

Mix topping ingredients together and pour over hot cake when it comes out of the oven.  Let cool 30 minutes and remove from pan.  Let cool completely and dust with powdered sugar if desired.

Fig Coffee Cake with Strawberry Fig Preserves


2½ cups flour
1 cup sugar
1 stick butter
1½ tsp cinnamon
2 tsp baking powder
Dash salt
2 eggs
¾ cup orange juice
1½ cup fig conserves

1 cup dry oats
½ cup brown sugar

Combine flour, white sugar and butter with pastry cutter until mixture is crumbly and fine; measure out one cup of mixture and combine with dry oats and brown sugar.  Place the brown sugar mixture in the bottom of a greased Bundt pan.

Add baking powder and salt to main ingredients and stir well.  In large measuring cup combine eggs and orange juice and mix well.  Add to flour mixture and stir just until ingredients are moistened. 

Pour a little less than half of the mixture over the brown sugar mixture in the Bundt pan.  Spoon fig conserve over batter and cover with remaining batter; bake 350º for 35-45 minutes … test with toothpick inserted into center.  Let cool on wire rack for about 5 minutes and then remove from pan, inverting onto serving platter.  Top with strawberry fig preserves and serve warm or cold.


Fig Sauce/Conserves

8 cups fresh figs, stemmed and chopped
½ cup homemade brew, or stout beer
2 cups brown sugar
2 Tbsp candied ginger, finely chopped
1 tsp cinnamon
1 tsp cardamom
1 tsp red pepper flakes
1 cup finely chopped pecans

Combine all ingredients except pecan in preserving pot and bring to a boil.  Reduce heat and let simmer for 45 minutes or until mixture thickens.  Add pecans and cook another 5-10 minutes; spoon into sterilized jars and process in boiling water bath 10 minutes.  Yield:  9 8oz jars


Strawberry Fig Preserves

10 cups figs, stemmed and chopped
5 cups sugar
1 cup white grape peach juice
9 oz strawberry jell-o gelatin

Combine all ingredients in preserving pot and bring to a boil. Reduce heat slightly, but keep a rolling boil and cook for 45 minutes or so; spoon into sterilized jars and process in boiling water bath 10 minutes.  Yield: 14 8oz jars

Peach Honey Elderberry Coffee Cake w/Lemon Glaze

 8 oz whipped cream cheese
¾ cup sugar
½ cup butter flavored Crisco
3 egg whites
1¾ cups flour
1 tsp baking powder
½ tsp baking soda
6 oz light strawberry banana yogurt
½ cup elderberry jam
½ cup peach honey
1 cup powdered sugar
1 Tbsp lemon juice



In large bowl cream together cream cheese, Crisco and sugar until fluffy; add egg whites and beat well (about two minutes).  Combine flour, baking powder and baking soda together and mix well.  Alternately add flour mixture and yogurt to creamed mixture, mixing well after each addition.  Spread into well greased 11”x7”x 2” (or larger) baking dish. 

Combine peach honey and elderberry jam together and mix well.  Swirl into top of coffee cake.  Bake in 350º oven for 45 minutes or until toothpick inserted into center comes out clean.  Remove and let cool for 15-20 minutes. 

Combine powdered sugar and lemon juice together and mix well.  Drizzle over coffee cake before serving warm.
