Pig in a Blanket


Who says fun kid stuff isn't for adults?

Homemade blanket:

1 cup warm water (70º-80º)
2 tbsp. butter
1 egg
¼ cup sugar
3¼ cups flour
½ tsp. of each:
  • thyme
  •  basil
  • oregano
  • garlic powder
2¼ tsp. yeast

Combine all ingredients in the order given in bread machine and select dough setting.

1 lb. pigs (A.K.A. hot dogs)

Separate dough into two portions. Freeze one for later use.

Roll out dough into 12x10 inch rectangle and cut into eight strips.  Wrap strips around pig. Place on lightly greased cookie sheet.  Bake at 375º 15-20 minutes, until puffed and lightly browned. Serve with mustard, ketchup, horseradish, etc.

Mexican Hot Dogs

Mexican Hot Dogs




1 cup long grain white rice
2 cups water
½ tsp. salt
5 hot dogs, sliced not all the way through, lengthwise
¾ cup prepared salsa
¾ cup stewed tomatoes
1 cup shredded Monterey Colby Jack cheese
2 Chile peppers, thinly sliced

Preheat oven 350º

Cook rice according to package instructions. Place hot dogs in lightly greased glass dish. Cover with fresh garden salsa. Combine prepared salsa and stewed tomatoes. Mix with 2¼ cups of cooked rice. Spread over hot dog mixture. Sprinkle with cheese and top with slice Chile peppers.

Bake 350º for 40 minutes. Serve with sour cream and guacamole.

Hot Dog Pie




1- 9 inch pie crust
4 hot dogs cut into ½ inch pieces
4 small red potatoes, boiled and diced
6 eggs
1 tsp hot sauce
¼ cup parmesan cheese
1 cup shredded cheddar cheese
1 Tbsp ketchup
Salt & pepper to taste

Beat eggs well and add hot sauce and parmesan cheese.  Layer with potatoes, hot dogs; squirt one tablespoon or so over top of mixture and cheese; pour egg mixture over top.  Bake 375º for 45-50 minutes.  Let cool slightly before serving.  Cherry tomato chow-chow is a wonderful compliment to this pie.

Hot Dogs On The Glass

Many years ago I had this friend, Debbie Tucker, from Maine, who used to make this meal for her family quite often.  She would always tell me about it, and how good and easy it was to put together.  I never made it until the other day and she is right.  It is easy and it is good.  Thank you, Debbie Tucker!

3 cups mashed potatoes
8 hot dogs
4 slices American cheese
½ cup prepared mustard 
Paprika
Salt & pepper
Ketchup

Place hot dogs in a lightly greased glass baking dish; split lengthwise, but do not cut all the way through.  Fill each dog with mustard.  (I also added a layer of “rooster sauce” (Sriracha hot chili sauce). 

Cover with cheese slices (I used extra sharp cheddar cheese) and top with potatoes.  Sprinkle with paprika and salt and pepper; dot with ketchup.  Bake at 425º 15-20 minutes until potatoes are lightly browned.  Serve with side of veggies.

Melvin's Hot Dog Pizza

Pizza sauce
Hot dogs
Mozzarella cheese
Onions
Colored sweet peppers


Roll out pizza dough on pizza stone.  Spread with pizza sauce.  Sprinkle with mozzarella cheese.  Top with slices of hot dogs, onions and sweet peppers.  Dust with parmesan cheese and Italian seasoning.  Bake in 400º oven for 23 minutes.

Weenie In A Beanie Wrap

I am forever trying to use up leftover Saturday beans. Chili is good, but sometimes tedious. Who doesn’t love beans and hotdogs? This is sort of a take on pigs in blanket but different. First, spice up the leftover beans with some red pepper flakes, cumin and garlic powder. Then make up a batch of garlic herb dough in the bread machine. Use your imagination ooh, doggie.


4 hotdogs
1 medium onion
1 cup baked beans
Bread dough
Ketchup
Mustard



Garlic Herb Dough


 
1 cup water (70º-80º)
2 Tbsp butter flavored Crisco
1 egg
3¼ cups flour
¼ cup sugar
½ tsp garlic powder
½ tsp basil
½ tsp oregano
½ tsp tarragon leaves





Select dough setting. When finished, divide dough in half and freeze half for another meal. Divide into 4 portions and roll out into 6x4 inch rectangles. Place one dog on each blanket; slit dogs down center, not cutting all the way through; fill with ketchup or mustard. Sprinkle with chopped onion, spoon ¼ cup beans over dog and roll up. Press seams together to seal. Place on greased baking dish and let rise for about 30 minutes. Bake 375º for about 20 minutes, until golden brown. Serve with a dill pickle and more ketchup or mustard if desired.
