Blueberry Salsa

 




1 cup fresh blueberries

2 cups grape tomatoes, thinly sliced

½ cup sweet yellow onion, diced

1 tsp. minced garlic

1 jalapeño pepper, seeded and finely chopped

1-2 tbsp. fresh chopped cilantro

1-2 tbsp. white wine vinegar

1 tbsp. extra virgin olive oil


In large bowl, combine all ingredients.  With a fork, gently smash ingredients together to combine flavors.  Let chill in fridge for flavors to incorporate for at least an hour before serving with tortilla chips.


Enjoy this recipe I stole from my favorite Lowe's Food Store where we sip and shop.

Mexican Hot Dogs

Mexican Hot Dogs




1 cup long grain white rice
2 cups water
½ tsp. salt
5 hot dogs, sliced not all the way through, lengthwise
¾ cup prepared salsa
¾ cup stewed tomatoes
1 cup shredded Monterey Colby Jack cheese
2 Chile peppers, thinly sliced

Preheat oven 350º

Cook rice according to package instructions. Place hot dogs in lightly greased glass dish. Cover with fresh garden salsa. Combine prepared salsa and stewed tomatoes. Mix with 2¼ cups of cooked rice. Spread over hot dog mixture. Sprinkle with cheese and top with slice Chile peppers.

Bake 350º for 40 minutes. Serve with sour cream and guacamole.

Salsa

Garden Fresh Salsa






1 cup green peppers, finely chopped
1 cup onions, chopped
2 cups (2 medium sized) tomatoes, chopped
2 cloves garlic, minced
5 Chile peppers, thinly sliced
10 black olives, sliced
1 tsp tarragon leaves
½ tsp kosher salt
7 fresh basil leaves, finely chopped
1 tbsp extra virgin olive oil
2 tbsp red wine vinegar
½ tsp fresh ground pepper

Combine all ingredients in a bowl to combine.  Stir well and chill in fridge four hours or more before serving.  This goes great on salads instead of dressing or as a low fat condiment on burgers and hot dogs, or just as a side all by itself.
