Zucchini Bread


 This is Grammie Averill's old fashion zucchini bread

2 cups zucchini, shredded

2 cups sugar

3 eggs, slightly beaten

1 cup vegetable oil

3 tsp vanilla

1 tsp salt

3 tsp cinnamon

3 cups flour

1 tsp baking soda

1 tsp baking powder

½ cup raisins

½ cup walnuts

Preheat oven 350°

Grease two 9x5 inch bread pans.

In medium bowl combine zucchini, sugar, eggs, oil and vanilla; set aside.  In large bowl combine flour, salt, cinnamon, baking soda, and baking powder.  Mix well and create a well in the center of the mixture.  Pour zucchini mixture into well all at once.  Stir just to combine all ingredients.  Fold in raisins and nuts.  Pour into prepared bread pans. 

Bake 350° for one hour or until toothpick inserted in center comes out clean.

Zucchini Bars






½ cups all-purpose flour
1 tsp baking powder
¼ tsp baking soda
½ tsp ground ginger
½ tsp nutmeg
2 eggs, slightly beaten
1 cup shredded zucchini
1½ cups shredded carrot
¾ cup firmly packed dark brown sugar
½ cup chopped pecans
½ cup raisins
½ cup vegetable oil
¼ cup honey
1 tsp vanilla extract

Preheat oven to 350º. Combine flour, baking powder, baking soda, ginger and nutmeg in large bowl. In separate bowl, combine eggs, carrot, zucchini, brown sugar, raisins, walnuts, honey, vegetable oil and vanilla. Mix well and then add to flour mixture. Mix just until combined. Spread into ungreased 13x9x2-inch baking pan. Bake in 350º oven 25-30 minutes or until wooden toothpick inserted into center comes out clean. Cool in pan completely on wire rack. Frost with Citrus Cream Cheese Frosting.

Citrus Cream Cheese Frost
8 oz. package cream cheese
1 cup confectioners’ sugar
1 tsp finely shredded lemon peel

In a medium bowl, beat the cream cheese and sugar together until smooth and fluffy. Add lemon peel and frost the cooled bars. Cut into 36 bars.






Welcome to the 2018 A-Z Blogging challenge.  This will be my fourth year. Every year I take on the challenge with hopes of disciplining myself to keep writing throughout the year as much, if not more than just through the monthly challenge. Zucchini and Rice Amalgam

Zucchini Rice Amalgam


2 cups cooked brown rice
2 cups diced zucchini
1 cup frozen corn, thawed
3 fresh Chile peppers, thinly sliced
1 small green bell pepper, diced
¼ cup sweet pickle relish, or pickles, chopped
3 tbsp. rice vinegar
2 tbsp. olive oil
1 tsp. oregano
1 tsp. coriander
1 tsp. cardamom
1 tsp. marjoram
1 tsp. onion powder
Salt and pepper to taste

Combine rice and veggies and mix well. In shaker container, combine vinegar, olive oil and spices.  Shake well to combine and pour over rice mixture. Stir to blend. Let stand in fridge for 4-6 hours before serving to absorb flavors.

About six servings

Zucchini Tso Chicken

Zucchini Tso Chicken
 A new take on an old Chinese favorite for chicken!

1½ lb. chicken thighs
1 tbsp. soy sauce
2 eggs lightly beaten
1-2 tbsp. corn starch
Fresh ground pepper

Combine eggs, soy sauce, pepper and enough corn starch to coat the chicken well. Place in heated cast iron skillet and back 375º for 45 minutes, turning once.

2 tbsp. soy sauce
2 tsp. dry sherry
¼ cup chicken broth
1 tbsp. rice vinegar
1 tbsp. minced ginger
1 tsp. minced garlic
2-3 tbsp. corn starch

3 fresh Chile peppers
½ cup chopped onions
1½ cup broccoli florets
1½ cup chopped zucchini
Oil for deep frying

Combine sauce ingredients in a bowl and stir well before adding corn starch. Set aside.

Heat oil in Wok and add broccoli, zucchini, onions and peppers. Stir fry 3-5 minutes. Carefully add chicken from oven to WOK.  Pour in sauce and stir constantly until thickened. Mix with chicken and veggies. Serve over white rice.

Zucchini Lasagna


Tall Cool One says "Don't tell anyone how good this is."  So I'm not telling you, just quoting what he said.  This is the ultimate noodless lasagna.  

Zucchini Lasagna

2½ cups zucchini, sliced 1/4 inch thick (about 2 medium)
¾ lb ground beef
½ Vidalia onion, chopped
1½ cups pasta sauce
3 cloves garlic, minced
½ cup chopped celery
1 Tbsp Italian seasoning
½ teaspoon fresh ground pepper
2 eggs
1 cup cottage cheese 
½ cup parmesan cheese
4-6 slices Colby jack cheddar cheese


Directions:

Fry burger, garlic, celery, and onions until meat is brown and onions and celery are tender; drain fat. Add sauce, Italian seasoning and pepper.  Reduce heat; simmer, uncovered 10 minutes.

In small bowl slightly beat eggs and add cottage cheese, and half of the parmesan cheese.

In (1½ -qt.) baking dish spread a little sauce on the bottom and layer with 1/3 of the zucchini slices.  Top with half of the meat mixture, then 2-3 of the cheese slices.  Repeat layers two more times.  Sprinkle with remaining parmesan cheese and bake uncovered at 375 degrees F for 30- 40 minutes.

Let stand 10 minutes before serving.

Old Fashion Zucchini Bread

Grandma Averill’s Zucchini Bread

2 cups zucchini, shredded

1 cup vegetable oil

* 3 cups flour
1 tsp baking soda
1 tsp baking powder
½ cup raisins
* ½ cup walnuts

Preheat oven 350°

In medium bowl combine zucchini, sugar, eggs, oil and vanilla; set aside.  In large bowl combine flour, salt, cinnamon, baking soda, and baking powder.  Mix well and create a well in the center of the mixture.  Pour zucchini mixture into well all at once.  Stir just to combine all ingredients.  Fold in raisins and nuts.  Pour into prepared bread pans. 

Bake 350° for one hour or until toothpick inserted in center comes out clean.

*Crackerberries version uses 2 cups all purpose flour, one cup whole wheat flour and pecans instead of walnuts.

Zucchini Relish

There is a comical story that goes along with this recipe.  For years I’ve been trying to get my grubby little hands on the Averill family’s secret zucchini relish recipe.  My grandmother died and no one wanted to share that recipe with me.  Finally, I twisted some arms, and broke some legs, and one of the relatives gave me the recipe.  Not long after that, I received a jar of zucchini relish from my cousin from the Hill side of the family – (the other side of the family).  He and his wife also included a copy of the Hill family’s secret zucchini relish recipe.  To my hysterical surprise, the Hill family recipe is identical to the Averill family recipe.  How do you suppose that happened? 

I'm taking a big chance giving the secret away, but seeing how they don't read my blog, I'm going to share it and no one will even know.  Enjoy, it really is a tasty relish.


12 cups shredded zucchini
4 cups finely chopped onions
4 cups finely chopped green/red peppers

Combine veggies in large glass bowl.  Sprinkle with 1 cup canning salt, cover with plastic wrap, and refrigerate overnight.  Drain and rinse well.

2½ cups white vinegar
6 cups sugar
¾ tsp nutmeg
1½ tsp celery salt
½ tsp black pepper
¾ tsp turmeric
2 tbsp cornstarch
1 tbsp dry mustard

Combine all ingredients except for the cornstarch.  Cook in preserving pot until it starts to thicken (about 30 minutes).  Stir often.  Add cornstarch mixed with a little water during the last 5-10 minutes of cooking.  Pour into hot sterilized jars and process in boiling water bath 10 minutes.

Sausage & Zucchini Stuffed Pork Loin Roast

1½-2 lb Pork Loin Roast
½ lb bulk sausage
2 cups bread crumbs
1½ cup shredded zucchini
½ cup chopped onion
1 tsp garlic powder
1 tsp onion powder
1 tsp thyme
1 tsp Italian seasoning
1 tbsp extra virgin olive oil


Preheat oven to 350º.

Cook sausage and onion in large skillet until sausage is no longer pink; add zucchini and cook 3-5 minutes longer; do not drain.  Add bread crumbs, garlic powder and thyme and mix well.  Let cool slightly.

To butterfly pork roast place fat side down; starting at the thickest edge, slice horizontally through the meat stopping 1½ inch from the opposite side so that the roast will open like a book.  Pound the open roast with a mallet to flatten to about 1½ inches and remove any fat.

Spread cooled mixture evenly on cut side of roast; roll starting with long end, jelly roll style.  Secure with string.  Rub roast with olive oil and sprinkle with onion powder and Italian seasoning.  Place in lightly greased roasting pan and bake at 350º for 1½ hours.  Cool slightly before slicing.

Zucchini Relish... it's no secret!

Ecclesiastes 1:9 That which has been is what will be, that which is done is what will be done, and there is nothing new under the sun.
There is a comical story that goes along with this recipe.  For years I’ve been trying to get my grubby little hands on the Averill family’s secret zucchini relish recipe.  Nine years, my grandmother has been dead and no one wanted to share that recipe with me.  Finally (I cannot divulge who) one of the relatives gave me the recipe.  Not long after that, I received a jar of zucchini relish from my cousin from the Hill side of the family – (the other side).  He and his wife also included a copy of the Hill family’s secret zucchini relish recipe.  To my hysterical surprise, the Hill family recipe is identical to the Averill family recipe.  How do you suppose that happened? 

This is NOT that recipe — they would have to kill me for sharing something that has been a secret for however long.  This is the Anderson family zucchini relish recipe and I’m not good at keeping secrets.  Enjoy!

7 cups shredded zucchini
1¼ cup grated carrots
2 cups diced onions
2 jalapeño peppers, minced
1 cup finely chopped green pepper
¼ cup canning salt

Combine in large bowl and mix well.  Sprinkle with salt.  Break two trays of ice cubes over the top; cover with plastic wrap and let stand in fridge overnight.  The next morning, drain and rinse, and drain and rinse, and drain and rinse; (drain and rinse well).  Squeeze out excess water (when you put in strainer, lay a piece of cheese cloth in the strainer and then you can squeeze out the excess water).

Prepare jars.

2 cups sugar
1½ cup apple cider vinegar
2 tsp celery seed
1 tsp red pepper flakes
½ tsp each of the following:  cinnamon, nutmeg, allspice, turmeric, ground pepper

Combine sugar, vinegar and spices in preserving pot; bring to a boil.  Add veggies and return to boil; reduce heat and simmer (STIRRING OFTEN) for 25 minutes.

½ cup apple cider vinegar
1½ tsp Colman’s English mustard
2 tsp cornstarch

Combine vinegar, mustard and cornstarch in small bowl and mix well until paste is formed.  Add to veggies and cook, stirring constantly for five more minutes or until thickened.

Remove from heat, spoon into prepared preserving jars; process in boiling water bath for 10 minutes.  Yield:  7 – 8oz jars

Zucchini Cookies

And yet another fine way to use up those ever popular and always growing summer squash.

1 cup butter flavored Crisco or butter
1 cup brown sugar
1 Tbsp vanilla
2 eggs
1 tsp baking soda
½ tsp cinnamon
½ tsp ground cloves
½ tsp nutmeg
¼ tsp allspice
2 cups flour
2 cups oatmeal
2 cups shredded zucchini
1 cup raisins


Preheat oven to 375º

In large mixing bowl, cream the shortening and sugar together until fluffy.  Add eggs, zucchini and vanilla extract and beat well.  Combine flour, baking powder and spices together and mix well; then add oatmeal to flour.  Gradually add to mixing bowl, beating on low and scrapping sides of the bowl until mixed well.  Fold in raisins.

Scoop by tablespoons on ungreased cookie sheets two inches apart.  Bake at 375º for 12-14 minutes or until lightly browned on edges.  Cool one minute then remove to wire rakes to cool completely.

Flipside Pie


20-25 garlic herb flipside pretzel crackers, crushed to crumbs
¼ cup butter, melted
1 cup mayonnaise/salad dressing
¼ cup parmesan cheese
1 tsp horseradish
1 large tomato, sliced
½ large Vidalia onion, chopped
1 small zucchini, sliced
3 slices American cheese
Salt & pepper



Preheat oven to 350º.

Combine the crumbs and butter together and press into the bottom of a greased pie plate.  In a small bowl blend the mayonnaise and salad dressing (you can use all of one or the other, I used equal portions of Duke’s light mayonnaise and light Miracle Whip), parmesan cheese and horse radish and mix well.  Start with a layer of chopped onions, then tomatoes, then zucchini and spoon dollops of sauce over top.  Place one slice of cheese over that and then repeat the layers ending with a little sauce and the last slice of cheese. 

Place in bottom rack of oven and bake at 350º for 30-35 minutes.  Cool slightly before serving.

The Scoopmire's Italian Steak

It seems Crackerberries is going in the direction of my new venture... I'm in the process of writing a cookbook as well as trying to make some money at what I love to do... cooking, canning, baking, all that jazz. I've decided to share some of my favorite recipes on my blog...(the new me is going to (try) to post a new delicious recipe each day... okay, okay, so we'll see how things go, huh? :)

The first recipe I'd like to share comes from my friend Leslie. I made this and it was (in true Maine form) "WICKED GOOD"!!!! I did make a couple alterations from her recipe... I didn't exactly know what "round steak" was. Tall Cool One and I were grocery shopping and I asked him, "What's a round steak?" He looked at me funny. I said, "They all look round to me."

We ended up with a chuck roast and cut it up in cubes and marinated it in Robusto Italian dressing for ½ hour prior to cooking. Instead of the EVOO, I cooked it right in the Italian dressing. Also 1½ tsp. of pepper was plenty spicy enough for our taste buds. We had it over spaghetti instead of rice and we added a little mozarella cheese as well as the parmesan. It was a definite keeper so that is why I'm sharing it with you. Here it is served with bread sticks on the side:


Italian Steak
1 round steak, cubed
1 onion, diced
Extra virgin olive oil
1 tsp minced garlic
½ tsp salt
1 tsp oregano
1 tsp basil
1-2½ tsp black pepper
1½ cups beef broth
1 14 oz. can diced tomatoes
1 8 oz. can tomato sauce
4 zucchini squash, sliced
Parmesan Cheese
Cooked white rice

Brown steak in EVOO {Extra Virgin Olive Oil}; add onion and garlic; cook until onions are translucent. Add beef broth and remaining seasonings. Bring to a boil and add tomatoes and tomato sauce. Once mixture comes to a boil again, add zucchini, turn heat to low, cover and simmer for about 15 minutes. Serve over hot cooked rice and sprinkle with parmesan cheese.
