Turkey on Rye Meatloaf

When using ground turkey, it is very important to use spices, otherwise the taste is kind of institutional … not that I have any experience in an institution, but it kind of reminds me of the pale yellow walls or the green color that the halls are painted with. (Okay, I get that from watching movies.) Plain ground turkey is blah.

1¼ lb ground turkey meat
3-4 slices rye bread, cubed
¼ cup salsa
1 medium onion, diced
1 large egg
1 tsp cumin
1 tsp poultry seasoning
½ tsp coriander
¼ tsp curry powder
¼ tsp cayenne pepper
1 tsp fresh ground pepper

Combine all ingredients in a large bowl and mix well. Shape into a loaf in a greased baking dish. Bake at 350º for one hour. Let stand 10 minutes before serving.

It's An Acquired Tasty Turkey Burger

They sure do look like mush going on the grill but once they are ready, yum. You won’t want to make a turkey burger any other way. We were trying to come up with an idea or recipe to use up all those chicken livers that we had leftover from the Spiedini that we made. Tall Cool One came up with this idea. He’s a clever thing sometimes. He said to grind them up and mix them in with the turkey burger. Bear and I boiled up all the leftover livers (they really are nasty little things when they cook) and after he ate a few of them, I ground up what was left to go in with the turkey.

1 lb ground turkey
½ cup chili sauce
½ cup chicken livers, finely chopped

½ cup Italian style bread crumbs
1 egg
1 tsp sesame seeds
1 tsp poppy seeds
1 Tbsp butter
1 Vidalia onion, sliced
Salsa

In medium bowl combine turkey, chili sauce, chicken livers, bread crumbs and egg; mix well. Shape into 4 patties. Grill on medium-high heat about 8 minutes per side or until internal temperature reads 165º. While burgies are grilling, prepare buns. Melt butter or margarine in small microwaveable dish; add poppy and sesame seeds. Spread on top of burgie buns and toast on grill for last 5 minutes of cooking time. Top with Vidalia onion and salsa.

Chili Turkey Loaf

We are always looking for a meal that is tastey and good for you. "They" say turkey is one of the better meats you can eat. This one was really good.

1 lb ground turkey
½ cup chopped onion
¼ cup chopped green pepper
¼ cup chopped zucchini
½ cup Italian bread crumbs
¼ cup chili sauce
2 cloves garlic, minced
1 egg, slightly beaten
1 TBSP horseradish mustard
½ tsp salt
1 tsp Italian seasoning
½ cup French Fried Onions
Ground pepper
Prepared salsa (if desired)

Preheat oven to 350º

Mix all ingredients except salsa and French fried onions, in large bowl. Shape into loaf in lightly greased baking dish. Cover the top and sides with the French fried onions, pressing into the loaf. Bake at 350º for 40-45 minutes or until internal temperature is 170º. Let cool about 10 minutes. Remove from baking dish and slice. Top with salsa (if desired) and serve with baked beans and Cole slaw.
