Meatloaf


(Yes I am reposting)


Quick and easy never tasted so good.

1 lb. ground beef

2 eggs

½ cup Italian style bread crumbs

1 onion, finely chopped

¾ cup pre-made hollandaise sauce

1 packet beef flavored seasoning from Ramen Noodles


Combine the ground beef, eggs, bread crumbs, and onion and form into a loaf in baking dish. Stir together the hollandaise sauce and beef seasoning. Spread over the loaf and cook for one hour at 350º.


Serve with your favorite sides.

Dilly Salmon Loaf


1 (15½ oz.) can salmon, drained and flaked
2 cups fresh bread crumbs (great to use up some of that leftover sourdough bread in the freezer)
2 eggs, beaten
¼ cup finely chopped onion
3 tbsp. butter, melted
2 tbsp. lemon juice
½ tsp. salt
½ tsp. dill weed

Preheat oven to 350º

Combine all ingredients in large bowl and mix well.  Shape into loaf (my mother always put it in copper fish casserole pan) and place in a greased baking dish.  Bake 40 minutes.  Let stand 5 minutes and top with lemon dill sauce before serving.
 
Lemon Dill Sauce

1/3 cup butter
¾ cup mayonnaise
1 egg
¼ cup lemon juice
1 tbsp. sugar
¼ cup chicken broth
¼ tsp. dill weed

Melt butter in sauce pan and stir in remaining ingredients.  Cook over medium heat until thickened.  Do not boil.  Refrigerate leftovers.

Just a side note: This is not one of my better recipes. I was struggling with something for D and Dill came to mind.  I thought of doing a dill egg salad sammich and probably should have went with that idea.  Sometimes when a thought comes to mind, stick with it... don't second guess yourself.  Tall Cool ☺ne said I had to include a disclosure with the post.  I told him salmon is an acquired taste and some people might like it.

BMC (Bacon Cheese Meatloaf)



 


BCM Bacon Cheese Meatloaf

1¾ lb. ground beef

2 eggs

1 pkg. onion soup mix

5 oz. marinated mushrooms, drained and chopped

2 slices white bread, torn into small pieces

1 tsp. each: paprika, pepper, basil, chili powder, onion powder, garlic salt

3 slices bacon, halved

4 oz. Velveeta cheese

 

Combine all ingredients except bacon and cheese and mix well.  Place into a loaf in lightly greased pan.  Create an indent down the center of the loaf. Cut Velveeta into three rectangular chunks and place in the indent. Work the meat loaf around the cheese.  Place the strips of bacon over the top of the loaf.  Cook in 350º oven for about an hour, maybe a little more.  Let cool slightly before serving.

MEATLOAF








1½ lb. ground beef
¼ cup Italian style bread crumbs
¼ cup rolled oats
2 eggs
1 pkg. onion soup mix                                                            

½ tsp. tarragon leaves
½ tsp. marjoram leaves
½ tsp. thyme
1 tbsp. Worcestershire sauce
1 small onion, chopped
¼ cup green pepper, chopped
1 can of spam (optional for Annie Wilkes Meatloaf)

Combine all ingredients and mix well. Shape into loaf in baking dish. 


Also can be made into meatballs and thrown into a Marinara Sauce. 

Top with Piquant Sauce if desired.

3 tbsp. brown sugar
¼ cup ketchup
¼ tsp. nutmeg
1 tsp. dry mustard

Mix together and spread over top prior to baking.

Feel free to play with your food and decorate accordingly:  {Tail = green bean, eyes = two small green tomatoes with stems, whiskers = parsley stems and nose = cherry tomato cut in half} Bake at 375º for 45-55 minutes or until internal temperature is 165 º.

Savory Meatloaf

MEATLOAF

Mini-Muffin Meatloaf
 The Queen of Comfort food  

I found this recipe in a supplement of the local newspaper and wanted to try it.  I’m not plagiarizing really, because I changed the recipe a little bit to accommodate our taste buds.  But this is way better than Annie Wilkes Spam Meatloaf!!


¼ lb Jimmy Dean regular sausage
1¼ lb lean ground beef
2 eggs
1-2 slices oatmeal bread (preferably the end pieces) crumbled
½ tsp pepper
1 tsp Italian seasoning
1 tsp chili powder
2 tbsp ketchup
1 med onion, chopped
1 med green pepper, chopped
3-4 cloves garlic, minced
1 tbsp butter
1 tbsp olive oil

Preheat oven 375°

Heat butter and oil in small skillet until butter is melted, add garlic and cook until fragrant.  Add onions and green peppers and sauté about 5 minutes, just until onions are translucent.  Remove from heat.

In large bowl combine beef, sausage, bread, eggs, ketchup, chili power, Italian seasoning and pepper.  Mix well and add cooled onion mixture.  Grease muffin tin.  Divide meat into equal portions in 12 count muffin tin.  Pack meat in tightly.

Bake at 375° for 30 minutes.  Remove from oven and let stand for 10 minutes before removing from tins.

Creamy Soy Sauce
1 cup heavy whipping cream
3 tbsp soy sauce
1 tbsp corn starch mixed with 1 tbsp water

In medium sauce pan heat cream and soy sauce until just starting to bubble; stir in corn starch mixture and stir constantly until thickened to gravy consistency.  Spoon over mini meatloaves and serve with favorite side dish.

Annie Wilkes Spam Meatloaf

Annie Wilkes Meatloaf


1 lb ground beef
10 oz Black Pepper Spam
1 egg
1 medium onion, diced
½ cup Italian style bread crumbs
1 medium tomato, finely diced (Annie uses fresh, but I prefer canned for meatloaf)
1 can diced tomatoes
¼ cup ketchup
1 tbsp minced garlic

Mash the spam with a fork and combine all ingredients and mix well.  Shape into loaf in lightly greased baking dish.  Squirt Misery over top with ketchup and bake at 350° for 60-75 minutes.  Let cool for ten minutes before removing from baking pan to serving platter.

The Un-Classic Meatloaf

With food prices sky-rocketing anything to make food go longer is a good thing.  This meatloaf recipe makes a little meat go a long ways.



¾ lb ground beef

¼ lb bulk sausage
1 large clove garlic, minced
½ cup rolled oats
¼ cup potato flakes
1 egg
¼ cup BBQ sauce
1 small onion, diced
1 tsp marjoram




Combine all ingredients in bowl and mix well.  Form into loaf in greased baking dish.  Garnish with ketchup if desired.  Bake 350º for 50 minutes.
