Magnificent Meal - Feeding the Flock 23



This recipe idea came to me from remembering when I was a Brownie. We made (what was then called Mulligan Stew) where all the girls brought a can of soup and we mixed it all together to be on big soup.  Tall Cool ☺ne says it's called Stone Soup. Basically I took all the leftovers in the the fridge and sautèd them together to make a big ole magnificent stir fry.  

Canola oil
1 lb. onion sausage, casing removed
1 lg. zucchini, chopped
8 oz. whole mushrooms, halved
1 lg. onion, chopped
1 head broccoli florets, separated
8 oz. bag fresh baby spinach
8 oz. shredded carrots
1 large tomato, chopped
1 cup artichoke spread
2 tbsp. corn starch
3 tbsp. soy sauce
¼ tabasco sauce (sweet & spicy)
¼ cup water, (more or less)

In WOK add 1-2 tbsp. cooking oil.  Cook the sausage until no longer pink, remove from pan, cover with aluminum foil to keep warm. Drain grease from pan.

Add 1 tbsp. oil to pan and heat 1 minute.  Add zucchini, onion, broccoli, carrots and sauté for about 5 minutes.  Add mushrooms, tomato and spinach and cover.  Cook another 2-3 minutes.  Add tomato and artichoke spread and cook 2-3 more minutes, covered.  

Uncover and stir in sausage.

In measuring cup, combine corn starch, soy sauce and tabasco sauce and mix well.  Make well in center of WOK by pushing veggies up against sides.  Pour sauce into center and stir until thickened.  Mix into veggies and sausage.  Stir and simmer 1-2 minutes.  Remove from heat and serve.

Serve as is, or with a side of rice or muffin.

Focaccio

Broccoli and Mushroom Focaccio
What the heck is focaccio?   My definition is sauce-less pizza.



¾ cup warm water
1 tbsp olive oil
1½ tsp salt
2¼ cups flour
1 tsp sugar
1 tsp yeast

Combine all ingredients in order given and select dough setting on bread machine.  When done, remove to floured board and pat out to ½ inch thickness.  Place on baking sheet dusted with cornmeal or flour.  Dimple dough with finger tips. 

Topping

1 cup fresh broccoli
1 cup fresh sliced mushrooms
5-7 black olives, sliced
2-3 cloves garlic, minced
½ cup chopped onions
¼ cup parmesan cheese
1 tbsp olive oil
¼ cup shredded cheddar
1 tbsp Italian seasoning


Preheat oven to 400°.

Brush dough with olive oil and sprinkle with parmesan cheese.  Top with sliced mushrooms, broccoli, onions, black olives, garlic and shredded cheddar.  Sprinkle with Italian seasoning and bake for 23 minutes.  Let cool slightly before cutting.

Turkey Tetrazzini

8 oz linguine cooked according to package instructions, drained; keep warm ¼ cup unsalted butter
8 oz fresh sliced mushrooms
3 Tbsp flour
2 cups chicken broth
1 cup plain non-fat yogurt
½ cup green chilies
1 leek, chopped
1 stalk celery, chopped
½ tsp nutmeg
1 tsp pepper
3 cups cooked turkey
¾ cup grated parmesan cheese

Preheat oven 350º.

Combine flour and ¼ cup of the chicken broth until smooth.

In Dutch oven sauté celery, leeks and mushrooms in butter over medium heat until tender. Reduce heat and stir in flour mixture; cook one minute until smooth and bubbly; gradually add remaining chicken broth, stirring constantly. Cook and stir constantly until mixture boils and thickens; about 5 minutes.

Remove from heat and stir in yogurt, chilies, turkey, nutmeg and pepper. Add linguine and toss to mix. Spoon into a 3 quart ungreased baking dish and sprinkle with parmesan cheese. Bake 30-45 minutes until hot and bubbly.

Garnish with celery leaves (optional) before serving. Yield: 8 servings

Spiedini

Spiedini is an Italian word that means “skewer” or “kebab”. This would make one think of Shi-K-Bobs, right? Add zucchini, cherry tomatoes, baby portabella mushrooms, green pepper, Vidalia onions and beef or shrimp; grill it and serve it with rice. That would be a big YUM, and all good and healthy if you like all those veggies. Tall Cool One likes his meat…and to quote him “Shrimp does not pass as the meat dish.” So I found this interesting combination of Spiedini and thought, wow, let's see if this is a keeper. A little time consuming but it’s a very tasty combination.
6 slices bacon
1 large, whole, boneless, skinless chicken breast (halved lengthwise)
½ cup Dale’s marinade (you can marinate however you like)
2 large sweet Italian sausage links
3 whole large chicken livers
6 fresh basil leaves
6 large mushroom caps
2 Tbsp melted margarine or butter

In a skillet, cook bacon just until it starts to brown but do not let it get crispy; drain well. Rinse chicken breasts and cut each breast in half crosswise into thirds; marinate in ½ cup Dales for about 15 minutes. Cut the sausage into 6 pieces. Cut each chicken liver in half.

Place one of the basil leaves on each liver half. Roll each liver half in a slice of bacon, wrapped snuggly. On each of the 6 - 12 inch skewers, place a sausage, followed by a chicken breast piece, and a bacon wrapped chicken liver. Top each end with a mushroom cap. Brush kabobs with margarine.

Place Kabobs on the cooking grill (we put aluminum foil down so that the fire wouldn’t flair up and crispy fry them). Grill for about 14-22 minutes, turning a few times through the grilling time. Internal temp should be 165º for chicken and 170º for sausage.

Following the Italian tradition, Spiedini should be served with a pasta side dish but we served ours with Cole Slaw.
